Overview
Baillardran is a French pastry house that has been making canelés de Bordeaux since 1988. The brand is associated with the Baillardran family, who have been pastry makers for generations. It is known for its authentic canelés and other gourmet products.
History
Baillardran is a family of pastry makers. Philippe Baillardran was initiated into pastry at a young age in the family pastry shop alongside his father Raymond, mother Pierrette, brother Jean-Pierre, and sister Marie-Christine. He aspired to develop the shop around a single product. He went to America, where he worked in a French address, then in a New York restaurant, and continued his apprenticeship in Cleveland and Nantucket Island. In 1992, a second shop opened at the Marché des Grands Hommes. In 1994, a shop opened in Saint-Médard. The Baillardran house has been specializing in canelé since 1988, perpetuating the tradition throughout France.
