Overview

Gugumuck is an Austrian snail-farming, processing and hospitality company based at the Gugumuck-Hof in Rothneusiedl, on the southern edge of Vienna. It is best known for its Wiener Schnecken (Viennese snails), a food brand and restaurant concept built around the edible land snail, and for its farm-to-table bistro and garden bar. The business was founded by Andreas Gugumuck, who began breeding snails in 2008 after a career in the IT industry, made the farm profitable by 2010, and formally established the company in 2014 with the addition of a bistro and shop. The company operates its own Schneckenfarm (snail farm) and Schneckenfeld (snail field), where snails are bred and fed, and a production facility where they are processed by hand. Its product range includes fresh and prepared Viennese snails, smoked snails, snail sausage, snail ragout, snail liver dishes, and other specialties, sold through its own shop and served in its bistro. The bistro offers a seven-course gala menu several times a month, hosted by Andreas Gugumuck and chef Jürgen Winter, and the site also offers guided tours of the farm. Gugumuck positions itself as a guardian of Austria's culinary heritage, drawing on historical evidence that Vienna was once a world leader in snail consumption. The company has received recognition including being named "Best Young Farmer of Europe" by the European Parliament in 2014 during the European Congress of Young Farmers. It remains a private, family-rooted enterprise, operating primarily in Austria and the wider European Union.

History

The Gugumuck family has deep roots in Rothneusiedl, a historic settlement on the southern edge of Vienna. The family name traces back to Sebastian Gugumuck (1701–1781), who came from the Leibnitz district in Styria and settled in Neusiedl after marrying in Oberlaa in 1728. For generations the family farmed the Gugumuck-Hof, growing vegetables and crops; archival photographs document the family's agricultural life from the late 19th century through the 20th century, including a 1925 image of Gugumuck's Suppengrün (soup greens) at the Naschmarkt in Vienna. The modern Gugumuck brand was created by Andreas Gugumuck (born 1974), who studied business informatics and worked for ten years in the IT industry. Reading "Die grosse Prato: Kochbuch der österreichischen und süddeutschen Küche" and "Das kulinarische Erbe der Alpen," he learned that the snail had been an important part of Viennese culinary history: during the Middle Ages Vienna was a world leader in snail consumption, a tradition that briefly revived in the twentieth century but had disappeared by the 1980s. Inspired to revive this heritage, Gugumuck began breeding snails in 2008, along with processing them and becoming a restaurateur. He also initiated the Wiener Schneckenfestival (Viennese Snail Festival). By 2010 his snail farm had become sufficiently profitable, and in 2014 he turned it into a formal company, adding a bistro and a shop at the Gugumuck-Hof. The company has since grown into a multi-faceted operation combining snail breeding, artisanal processing, direct sales, and hospitality. Its bistro and garden bar serve a farm-to-table menu, including a seven-course gala menu offered twice a month, and the farm offers guided tours. In 2014, the European Parliament recognized Andreas Gugumuck as "Best Young Farmer of Europe" during the European Congress of Young Farmers. The brand continues to promote the culinary heritage of the Alps and Vienna's historic snail cuisine.
