Il Laboratorio del Gelato is a gelato company founded by Jon Snyder in August 2002 on Manhattan's Lower East Side. It started as a custom lab for New Yorkers to explore unique flavors and for NYC area chefs to source frozen desserts. Over the years, it has grown to become NYC's leading restaurant wholesaler and retailer for hand-crafted gelato, with a flavor list approaching 300.

Il laboratorio del gelato was born in August 2002. The idea was to imagine a 'lab' where flavor creation and recipe development take center stage, where classic flavors could be perfected, and pure ingredients honored, and where NYC area chefs would be encouraged to work with the company to develop unique flavors for their menus. Over the years, it has grown to become NYC's leading restaurant wholesaler and retailer for hand-crafted gelato. Jon Snyder, who founded the company, had a lifelong passion for ice cream, working at his grandparents' Carvel Ice Cream Shop from age 9, and later founding Ciao Bella Gelato Company at 18. After selling that business, he attended Columbia College and Columbia Business School, then worked at Wall Street investment banks. In August 2002, he single-handedly opened il laboratorio del gelato on Manhattan's Lower East Side.
